A couple of days ago, I received my review unit of Coava Coffee’s stainless steel filter for the Chemex, the Kone. Keith was gracious enough to send me one, so I wanted to be quick to post my initial impressions after Lee and I spent part of last night tinkering around with it. A fuller and more developed review still to come, of course.
- The hydrodynamics of the Kone is noticably and inherently different. I had to adjust the way I poured.
- The cup it yields, as Jesse Raub noted, is similar to that of a Cafe Solo.
- I was worried that it would perform a little too similarly to a Swiss Gold filter, but it’s not. I have a couple of theories as to why, but I’ll hold off on sharing them.
- In the hand, it felt different from what I was expecting. It’s sturdy, but I keep worrying I’m going to sit on it and crush it irreparably — yes, I regularly put my filters on chairs… don’t you?
- When brewing with the Kone, I found myself thinking a lot more about volumetric brewing via column pressure versus brewing by weight, grind size, and flow-restriction. Darn you, Tom Pikaart!
- I agree with Kyle Glanville: Finer grind needed.
